On Breakfast of Champions (for some): Easy Steel-cut Oats (recipe)


Simplified from Alton Brown’s recipe (because I never had buttermilk handy and I only bought milk to make something that specifically called for it), I used to make this for my husband when he started learning about cholesterol levels and soluble fiber, and that not all oats were created equal. Since I preferred a heftier breakfast like the one pictured above, the whole batch will be divided into 3 microwavable containers which he took to work so he can have a leisurely breakfast (steel-cut oats require more chewing than regular oats) while catching up on email at work.

Easy Steel-cut Oats

  1. Melt 1 Tbsp of butter in a pot over medium heat, and add 1 cup of steel-cut oats. Stir the oats to toast them (2 – 3 min).
  2. Add 3 cups of water and bring to a boil. Reduce heat and partly cover and simmer on low heat without stirring, about 20 min.
  3. Check for doneness. Add 1/2 cup whole milk if you have, and you prefer a creamier texture, or add 1/2 cup more water. Add 1 Tbsp brown or white sugar, or maple syrup, and 1/2 tsp ground cinnamon, and some raisins or dried cranberries. and cook for additional 10 min. or when it reaches desired texture.
